Exploring Bordeaux
Sunday, October 2, 2011 at 11:20AM I was given the most wonderful task: find exceptional Bordeaux wines and recreate a French countryside dinner in the garden of one of my favorite clients for his 40th birthday party. I turned into the ultimate wine nerd. I started picking the brains of my coworkers that routinely travel to Bordeaux, researching vintages, and constructing a menu based on traditional French cuisine and techniques with impeccable Californian meats and produce. The idea was to have a family style dining experience with a paired flight of wines featuring the Left and Right Banks and finishing with an unbeatable Sauterne.
After much research and comparative tasting I designed the following menu in conjunction with chef Daron Wiemeyer...
